CHICKEN SCHNITZEL AND ACCOMPANYING RECIPE

Requirements:

  • 6 pieces of chicken breast
  • 2 eggs
  • 4 tablespoons of cream
  • 2 cups flour
  • 2 cups of breadcrumbs
  • Salt
  • Black pepper
  • 3 tablespoons (90 g) of butter
  • Sunflower oil

 

  • Crispy Potatoes:
  • 2 potatoes
  • 6 tablespoons of olive oil
  • 2 tablespoons of vinegar
  • 1 teaspoon of chili pepper
  • 1 clove of garlic
  • 2 sprigs of scallions
  • 1 teaspoon of salt
  • Another Cabbage Salad:
  • Quarter cabbage
  • 1 pinch of salt
  • 1 carrot
  • 2 sprigs of scallions
  • 1 tablespoon of mustard
  • 2 tablespoons of mayonnaise
  • 3 tablespoons of pickled juice
  • 1 teaspoon of black pepper

 

  • Delicious Butter:
  • 6 tablespoons (180 g) of butter
  • 6 sprigs of parsley
  • 2 cloves of garlic
  • 1 wipe teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of paprika
  • 1 lime or lemon.
Method
  • First, for the ghee, melt 3 tablespoons of butter in a small saucepan over low heat. Pour the schnitzels into a large frying pan, taking care not to take the melted butter on top and the milk under it. Add sunflower oil and heat it.
  • Remove the small piece from the inside of the chicken breast. You can make nuggets with this piece if you wish.
  • Cut the thick side of the chicken from the top, horizontally, without complete separation. Then cut the inner thick part in the same way to the other side, again without separating.
  • Then place it between two refrigerator bags and beat the chicken with the meat beater without breaking it. At this stage, it is important to make the chicken as thin as possible without harming the meat. When beating the meat to make it thinner, hitting the beater by pulling will not damage the meat and will make it thinner.
  • To get the schnitzel, pour 2 cups of flour, 2 pinches of salt and black pepper on a large plate and mix.
  • Then break 2 eggs on another plate, sprinkle 4 tablespoons of cream and 1 pinch of salt on it and beat well. If you wish, you can also pass this mixture through a strainer so that the chicken is covered with the egg.
  • Finally, put 2 glasses of breadcrumbs finely sifted on a large plate and sprinkle 1 pinch of salt on it and mix.
  • Sprinkle a pinch of salt and black pepper on both sides of the chicken before you add flour. After that, The first flour, then the egg, finally the breadcrumb flour, and fry in hot oil until it turns golden yellow and becomes crispy.
  • For the potato salad, cut 2 potatoes into large cubes. Sprinkle 2 tablespoons of olive oil and 1 teaspoon of salt on it and fry in the oven, grill and fan mode, at 250 degrees, occasionally turning over and over for 40 minutes until they are crispy on the outside.
  • In the last 5 minutes of the potatoes, in a large bowl, mix 4 tablespoons of olive oil, 2 tablespoons of vinegar, 1 teaspoon of chili peppers, 1 clove of garlic puree and 2 finely chopped spring onions.
  • When you pour the sauce over the potatoes that come out of the oven and mix it well, the first accompanist is ready.
  • For the cabbage salad, finely chop a quarter of cabbage and add 1 pinch of salt to soften it and rub it.
  • Grate 1 carrot on the cabbage and add 2 sprigs of spring onion finely.
  • For the sauce, mix 1 tablespoon mustard, 2 tablespoons mayonnaise, 3 tablespoons pickle juice and 1 teaspoon black pepper and add it to the cabbage and your cabbage salad is ready.
  • Finally, for the delicious butter; In 6 tablespoons of room temperature butter, add 2 cloves of garlic puree, 1 teaspoon each of salt and black pepper, the peel of 1 lime and half the juice.
  • Add the finely chopped 6 sprigs of parsley to the mixture and mix well until all the flavors are mixed.
  • Place the mixture on baking paper and roll it like a large salami.
  • Squeeze the edges of the paper by squeezing in the opposite direction and keep it in the freezer to harden. Since it will be difficult to shape when it is soft, you can remove it and correct its shape after it hardens a little. After the schnitzel is fried, cut a slice on it and serve.
  • Crispy chicken schnitzel is at your disposal, which will not be worthy of delicious companions and restaurants.
